Details | Come to the Seymour Library as the Library begins hosting a series of food demonstrations that hope to combine sound nutrition with appetizing and flavorful foods in new palatable combinations. Caty Poole’s demonstration and tasting today will be eggplant “meatballs” – a make ahead meal that freezes well and frugally uses a vegetable that is widely available in gardens and farms or low cost in markets. Eggplants besides being tasty and versatile have the added value of being filled with vitamins that fight diabetes. More information about the Nutrition on Wheels food demos can be found by calling the Library at 203 – 888-3903. Registration is required for this program which can be done in person, by calling the Library or by emailing sgarvey@biblio.org.
